The spice mixI’m not very good about recording exact measurements when it comes to ingredients. So while I can guide you on the spice combinations themselves, sometimes you’ll just have to figure out how much of each spice you want to add to the mixture.

Tonight’s menu is a spicy italian white wine garlic and onion mix, marinate, and grill.

You’ll want to start with the spices themselves. The spices I used were:

  • Onion Powder
  • Garlic Powder
  • Garlic Salt
  • Thyme
  • Parsley
  • Basil
  • Oregano (just a few dashes)
  • Red Pepper
  • Dried and powdered red and green bell peppers
  • Orange Peel
  • Paprika
  • Black Pepper
  • A dash of Cumin
  • A dash (or three) of Lawry’s Seasoned Salt

Once you have ground the spices together prepare a mixture of about 1/4 cup water, 1/4 extra virgin olive oil, a dash of vinegar, and some white wine.

Spicy White Wine Garlic And Onion Chicken

You’ll want to take about 1/4 of the spice mixture and put it in a shaker for use right before grilling. Mix the remaining 3/4 of the spices with the liquid mixture.

Wash your chicken breasts, cut off any excess fat, and place in a plastic bag (or other container). Pour in the mix and make certain all the breasts are thoroughly coated. Place the chicken in the refrigerator and marinate for at least 30 minutes. I marinated mine for about two hours.

Once the chicken is ready, fire up your grill, wait until it is nice and hot, and slap those puppies on! But wait!! Chicken on the GrillWhen you put them on the grill make sure to sprinkle half of the remaining 1/4 spices on top of them. Do this quickly so it will stick and then immediately turn them over. Once turned, sprinkle the remaining spices on them and then let grill. Turn your chicken from time to time and make certain not to undercook (or overcook) your meat. If you can grill them over indirect heat, that is the best way to go. It will take longer, but the chicken will turn out very nice. If you need an internal temp to guide you, shoot for between 160-170 degrees F.

While the chicken looks excellent, surprising its the carrots that have me tempted. Maybe I am jsut a sucker for brown sugar. Excuse me while I go find a keg of molasses….
